Is you car burning coolant (smell your exhaust on start-up)? You can also check your oil for coolant. If there's any in there, they messed up the head gasket job.
Otherwise, with all that hose switching and such going on, I wouldn't be surprised if a hose-clamp or two was left loose. Check the simple stuff first, like tightening the cap on the radiator and coolant resovoir, and then start tracing the water hoses. There are a bunch, but the leaky coolant should be collecting on the low parts. I usually feel for leaks, as it's easy to identify gunk on your hands for what it is. With new hoses it should be easy to spot too!
If you still can't figure it out, make your shop test for leaks by pressurizing everything and/or using dyes. It takes a good amount of time for leaks to show up sometimes.
