I can't speak directly for a V6 but I have done a valve job on an eight valve 4 cylinder. It was not that difficult, and can be done with the engine in the car. All it takes is for you to pull the cylinder heads, and then to take the heads, valves and all to a competent machine shop for machining and valve replacement as needed.
I would recommend having a manual for reference (Haynes or other) for disassembly/assembly instructions. Of course, the cams must be properly aligned with the crankshaft on reassembly, but with the proper instructions, that's not difficult either. Good luck.
