I would encourage you to do the wheel bolt torques yourself. If you ever see someone using an impact wrench on your wheel bolts, be very concerned. I also distrust 'torque sticks' which are flexible socket extension rods which are meant to limit torque as a result of their torsional flexability.
I am thinking that the rotors may be fine, but have a material transfer from the pads to the rotors. Agressive bedding in burns off some of the organics and puts an even amount onto the rotor. And after lots of gentle braking, the pads can wear down to an organic rich depth of the pad and one agressive braking session can transfer material. When stoping fully with hot rotors, one needs to avoid clamping the pads onto the hot rotors and release the brakes and allow the vehicle to stop with light pressure at the end if the situation allows.
If the brake shudder is really bad, turning might be the only cure.
