I have a '96 900SET and my wife has a 2003 Odyssey EX. We absolutely love the van. It is fast and quite comfortable. To answer your questions:
1. Mobil 1 0W-20 is an alternative to the dyno-oil 5W-20. It even says so on the bottle. I change my own oil and started using it from the first oil change (7500 miles). I follow the schedule in the manual, changing the filter only every other oil change (strikes me as strange but oh well). I did have to buy a filter wrench b/c the factory filter was on TIGHT. Also, removing the filter is a little tricky because it is very easy to spill oil on the subframe (which I did).
2. The only problem we have had so far had to do with the electric door striker. You need to keep it clean otherwise it will think it is opena and beep when you engage a gear (assume you have an EX - if not, disregard).

One thing I would suggest if you don't already have them is to get the fog lights. They are great and really improve lighting to the side.
