We've talked a lot about paint detailing clay in here. A search on "clay" will turn up many posts which should answer all your questions about it.
As for what polish to use, that's a very difficult to say because of the many variables. The wisest choice is to start with a mild polish and gauge results from there. You can find some nice, mild polishes at auto parts stores from 3M, Meguiars, Mothers, etc. Try something like a swirl mark remover which is a mild, easy to use polish.
What to do after waxing? Well, what about the wheels, tires, wheelwells, trim, glass, leather, door panels, weatherstripping......... :-)
