Slotted and dimpled pads will improve braking when you are repeatedly brake and get the pads so hot that gases flow out of them. The slots and/or dimples-holes keep the pads from floating on their own gases, that is pad fade. So other than looking cool, the pads will wear faster and drill rotors can end up cracking. So there is no significant advantage for day to day driving or emergency stopping. Did I mention the co$t?
There may be an advange with wet brakes, but you should be aware of those issues anyways and drying them when needed by applying the brakes.
EBC brakes will provide more braking effort than stock brakes and less dust. These are a kelvar pad, and have metal bits in them, so, yes they are semi metalic too. The kelar and other 'organic' types have material that transfers to the rotor and you get coheasive friction action. These brakes need to be bedded in or seasoned properly. And no, the instructions that come with the pads are not useful.
Many are installing EBC on new vehicles as the OEM pads are wearing out and takeing the rotors out sometimes in as little as 20K.
Ceramics are pads with some ceramic something in them. Kalvar pads are pads with some kelvar in them. Other than that the term ceramic or kelvar really does not mean very much at all.
