I'm doing this using a Pinnacle AV/DV capture board, Pinnacle 8.x software, and a Pioneer DVD burner. Watching regular 8mm from a 12 year old Sony camcorder -> DVD on a regular 21" TV the results are OK, the moment you pop the DVD on the 55" projection TV it does not look that great (can't rewrite the laws of physics, NTSC, etc).
I've also captured digital 8 from a friend's Firewire card and the results rocked to the point of me saving money to buy a nice DV camera. I'll be honest and say that I am not pleased with how 8mm looks on DVD but that's all that can be done. Maybe my expectations are high :-) If anyone has consumer grade 8mm -> DVD that does not look like junk on a 55" TV I'm willing to listen.
Another couple of caveats, the Pinnacle card / software take aeons to render the IFO / VOB stuff for DVD. An hour home movie takes 2-3 hours worth of rendering time. This is a function of the rendering software; a friend with a similar machine and Linux does it in 1:1 time. Rumors have it that Leadtek has a capture board and software that works much faster. This is on a P4-2.4ghz / Win2k / 512mb RAM system.
I've captured other sources (analog from a VCR, same quality, analog via S-video from S-VHS or DVD, much better).
Also, I have yet to find a way to do DVD menus. They're doable, I have not spent the time so far. I've decided to hold off any more video editing till I upgrade to RAID or SATA.
