It's foolish, but common.
If there is lightning in the area - not even a direct strike, and your dish disapates some of it, it will go down your Coax to your AV gear instead of mostly via the ground wire.
It's also part of the national electrical code that outdoor antennas should be grounded. If you remove the ground, and by coincidence your house burnt down or your electronics all got destroyed because of lightning or electric wires hitting your dish, that's something our insurance company _might_ fault YOU on and try to weasel out of paying.
If the ground wire is bare aluminum which you don't like, you can replace it with higher quality insulated copper wire that matches your exterior from home depot if you want. It can also be fastened to the house better than most dish intallers normally do. Grounding is one of those niche geek professions where there's a mix of science and art and price and extent of work can be unlimited depending on the work site and the value of the gear needing protection.
