First, take care of your girlfriend ASAP and visit a specialist.
Second, I would sent a letter to SAAB with all the pictures you took. Start with positive remarqs then ask them what could be the cause and if they can look at the car and agreed that you wont sue them or something like that (if you want to know exactly what happened). I dont think the pulley belong to your GF vehicule. As far as I know a missing pulley or belt won't make the car going like that.
Ask SAAB if they are willing to cover (as a goodwill gesture) some medical expenses.
Third, make your girlfriend drive as soon as possible, even in the parking lot, even for 2 minutes.
Fouth, take a good breath and do one thing at the time. Thing will be better and better as time goes.
A few years ago, a motorcycle hit me in the back while I was waiting at a red light. I saw him coming fast in my rear mirror. The moto passenger was badly hurt. Many days after while driving, I saw in my rear mirror a motorcycle going fast behind me, my heart stopped for a second. But soon after I was OK.
Good luck
