Try an Ecco...it'll be a tossup over comfort with the Dansko.
Dansko's also have a slip resistant sole which is another reason that chefs like them. I've had chefs from famous Boston restaurants buy from me! The reason they feel so good is a) PU soles are naturally cushioning and b) they have one of the best designs for lateral stability in the industy. So you foot stays flat and stable. IMHO, its not a Dankso unless its the Professional/Karl/Sonja (same thing, backless or not) and its the oiled leather (actually nubuck) in black or brown. Thats what we sold for years till the company started getting funky with colors and different types of leather (patent, sealed, etc.)
