Clearly you have never heard of my yearly BBQ...

This year involved pulled pork that smoked for 36 hours (Then it was pulled, mixed with sauce and chopped onion and then draped with the fat skin and given another 2 hours in the oven, after which it met up with some home made coleslaw on fresh potato rolls)

A beef roast that was slow cooked on my custom spit over natural charcoal, it was brushed regularly with a mixture of french onion soup and butter.

Cubed Turkey breast wrapped in bacon and smoked over apple wood and apple slices.

Then there was about 3 gallons of chili that I out-sourced to a friend who know his way around the spices and beans.

Jamiacan jerk chicken thighs came next, walkers wood is the only seasoning you need to know about for those.

Then to mix up a bit there was 12lbs of steamed lobster with accompanying corn and potatoes.

The center piece was of course the ribs which had been parboiled in beer and then dry rubbed and smoked for 12 hours, they got mopped with apple juice the whole time. The beer that the ribs where boiled in became the base for the bbq sauce which was made from fresh tomatoes, honey, molasses, mustard and vingear. The overall flavor of the sauce is very sweet in contrast to the dry rub which is quite spicy.

Once the ribs where considered done, they where split into individuals and dunked in the sauce, they then get some direct heat from the grill, carefully just enough to carmalize the sauce.

Northerners can't BBQ......
