In rallying, I use the technique called left foot braking and the Swedish flick. Left foot braking is using the left foot to brake while simultaneously using the right foot to keep the gas on. This causes the rear wheels to lock up and therefore lose traction. This allows oversteer. The Swedish flick is to start a turn in the opposite direction you are actually going. That is, start a left turn with a little flick to the right. This can also destablize the car and allow rotation. But practice carefully.
