Actually I use Ubuntu at home, and in most of my lab. It's a great distribution, but may not be the best choice for what you are trying to do. It makes a great server with tweaking, but 'out of the box' is intended to be a desktop OS. It doesn't come with a GUI for configuring server services like apache. The argument for this is that people who want a server can use the command line. I'm a huge advocate of the command line myself, but appreciate that there is a definite learning curve that can be frustrating.
Anyway, a redhat (fedora), mandrake or SUSE distribution should work. Maybe MEPIS too, I'm not familiar with it.
To edit the web page using a GUI you can always use Mozilla Composer or Openoffice (if not too complicated)
Good luck! Learning this stuff is fun, despite little glitches along the line.
