The 8-valve VW/Audi engines if the mid-'70s to mid '80s were non-interfering engines, which means that a broken timing belt will render the car temporarily unusable, but will not trash the valves or pistons. I helped a friend replace a broken timing belt on a Rabbit in the parking lot at work, drove the car away in less than an hour. So, I suppose you could drive it until it breaks, although this is probably not a great idea on your wife's car. This is definitely not the story on their current multivalve engines, don't know if this is still true on their current 8-valve engine.
Regarding fluids, I have found that VW/Audi is quite lax on their recommendations. Our current Audi is specified as having "lifetime" coolant, which has no change recommendation interval. I guess that the car will choose a different "lifetime" if left unattended.
