I would take several small smaples of the mortar and have it tested in a lab. They will be able to tell you the exact combination of ingredients. The multiple examples will help eliminate the possibility of erroneous results (bad mix originally, old repair area, etc...).
You need to match the original mortar or risk damaging the brick. When the brick is wet and freezes, the brick will expand. If the new mortar is harder than the brick (modern portland-based mortar), then the faces of the bricks will pop off and you will have a ruined wall.
If you do have the older lime based mortar, all the components of the mix are still readily available.
We typically used to grind out about 1/3 of the way into the joint and wire brush any crud out. Consider wetting down the wall prior to pointing it up - the dry brick will suck the water right out of the new mortar. This will cause very weak, crumbly mortar.
Then tool the joints correctly to match existing.
