I haven't found Saabs to be much different than other cars for most stuff. It's just that the "stuff" can be different. And parts can be more.
But brakes is brakes. By comparison, new front pads and rotors, rear parking brake shoes (inside the rotor hub) and an A/C recharge on my wife's Exploder was about $670 a couple months ago at the local gas station. I shudder to think what the Ford garage would have hosed me for--probably close to a grand. Wish I'd had time to do the job, but I was traveling a lot.
A tranny flush for $235? Total rip off, unless the Suburban has some very unusual needs. The tune-up sounds like another "profit opportunity." It probably consisted of plugs, wires, filters, serp belt, new coolant, and looking stuff over. 2 hours of labor, $100 in parts.
NEVER take a car to a dealer.
