I use Eudora pro which has both user-createable filters and a Junk mail AI that learns what you consider spam as you mark messages as Junk (command-j - same as delete except the AI gets a chance to make a note that you consider that piece of mail as spam). All 'Junked' emails go to a Junk folder so you can still go in and see what's been automatically junked. I'd say, since I've been using it for a long time, it correctly junks 99.999% correctly. On the rare instances in which it junks a non-junk email, there is a menu command to say, "Hey, this isn't junk and don't consider it as such anymore - and the message is replaced in the proper folder (if you have lots of sorting like I do) it would've been placed. I've made about two dozen filters with about half of them for persisten junk emails and half to auto-sort my incoming emails.
