Synthetic doesn't absorb water/moisture. (On the down side, this means that any moisture in the system tends to 'pool' in low spots and cause corrosion. The upside is that the boiling point of the brake fluid doesn't change, either)
Synthetic doesn't eat paint. That's a nice plus in a 'classic' car.
It's a lot harder to bleed, though, as it tends to entrain air. It also, afaik, can't be used in an ABS system, owing to the bubbles, and viscosity differences.
