Sunny f16 indicates the correct exposure for a well-lit direct sun scene, such as is the surface of the moon. The starting point is f16 at the reciprocal of the ISO. So at an ISO of 200 for this particular moon picture, you choose 1/200th of a second at f16, OR 1/400th at f11, OR 1/800th at f8. Of course, most cameras don't have exactly these shutter speeds, but you get hte idea. He chose 1/320th at f8, which is about 1 1/3 stops greater exposure than sunny f16. Sunny f16 doesn't mean you have to remain at an aperture of f16.
