As others have said, yes, you can negotiate. And again, as other have said, start collecting information on what the car is worth. Search KBB, Edmunds, NADA (and always use retail numbers), collector car guides, as well as classified ads.
Just a couple of notes: remember, you were hit, you were/are inconvenienced, you need to be made whole (returned to the same status as before the accident), and time is of the essence. Remember those four phrases. A couple of years ago my wife was hit three times in a ten month period that resulted in two totaled cars. By the third accident I was very aware of how to handle the situation. Rest assured they will low ball you and honestly, you can't blame them - their job is to reduce payouts and if possible extend the payout date. So, the first thing you should do is have them get you a rental car if they haven't already. It's amazing how quickly they will want to settle if they are footing the bill for a rental car. None of this should come out of your pocket - Enterprise and others direct bill insurance companies (you'll need a credit card for the deposit though) so call the adjuster and have him set it up with the local car rental place. Even if you don't need it, get one; believe me, it will speed up the process.
The most important phrase to remember is that you need to be made whole. They need to accurately compensate you so that you can acquire a similar car. Be well prepared and make them show you how they came up with their number if they don't agree with your number.
