Disclaimer: I write software for a company that makes smartphone and other related software...
I don't know much about the AIM solutions on these phones. My guess is that they would go through your data plan, but I don't know for sure. I do know that you can definitely view *and* edit office docs on any of these phones - although not necessarily with the built-in programs that come with the device. Ironically, Microsoft's Office software on Windows Mobile devices is pretty weak.
There are some big differences between these devices, perhaps the biggest being Palm OS vs Windows Mobile. Have you used either of these before? Might be worth a trip to a Cingular store to play around with them so you can decide which you like better. I'm pretty sure the Blackjack is Windows Mobile 5.0 Smartphone Edition which should mean it has a touchscreen, but I'm not sure about the 8125. It's a personal preference, but Windows Mobile 5.0 Pocket PC Edition does not have a touchscreen, and that's something that would drive me nuts.
