Just went through this myself, there's a lot of info on the web, try http://www.camcorderinfo.com. You can get a decent one for well under $800 and use the savings to buy more baby stuff.
A few things to consider:
1) Decide whether you want to edit on a computer or not. Cameras that record on DVD or hard drives lose picture quality if you edit the files because they are already compressed in DVD format. Cameras that record on miniDV tapes are very edit friendly because they are not compressed to DVD bitrate yet (they record at ~3x the DVD bitrate).
2) Does recording time matter? Those tiny DVDs get about 20-30 minutes of video, that's it. Hard drive cameras vary depending on the size of the drive. MiniDV tapes record 60min at SP or 90min at LP settings. Be aware of battery time too, and those extended life batteries can get heavy.
3) Size of camera on average (smallest to largest)...hard drive, miniDV, DVD. But really all modern cameras fit in the palm of your hand.
4) Read reviews online and go to local stores and try them out.
I ended up getting a Canon Elura 100 for about $320. Very affordable and great picture quality. It also does real 16x9 widescreen not the fake stuff that some other cameras do.
