Where and how is the display going to be used? If it is indoors, like at a trade show, chances are the lighting is going to be the wrong "temperature" and that will affect the color you actually see. If it going to be outdoors the same color will look quite different. You'll need to try to replicate the lighting when you get the panels you need printed, if that's the way you do this.
Another difference is what kind of substrate you print the color on. Talk to the company doing the work and see what they would recommend.
Options:
If you go to someone who has a wide format inkjet printer, preferably one that uses 6 or 8 colors of ink and give them a Pantone number, they can probably match it. These machines print rolls of paper (or whatever) 4 to 12 feet wide. Sign and banner printing companies often have these kinds of machines, called generally called wide format printers (super wide from 60" to 98", then grande format for the big stuff like on billboards. The shop can run a spectrophotometer over the printed output to see how close it comes to what you want. Also look for a company that does vehicle wraps. They use the same technology to wrap buses, trucks, buildings, etc. The computer and software that run the printers they both use are designed to do color matching, so that's one way to handle it. It isn't cheap, though.
You're in NYC, and there are a bunch of wide format printers there. Google wide format printing, screen printing, vehicle wraps, etc.
A good paint store might be able to match the paint and give it to you in a sprayable formulation. Almost definitely cheaper than a wide format printer, but then you still have to do the spraying, drying, etc. When hyou do this you have to make sure it will retain the color when on whatever you put it on. That can be a definite crap shoot.
