That is actually not required with most modern flash drives, and can be easily defeated even with old ones. The "Safely Remove Hardware" function is designed to clear the write-behind cache on portable storage - if you pull out the storage while Windows has data in its cache, that data may not end up getting written to the storage. XP and Vista don't use the cache like 2000 did so it's generally not a problem, but even in Windows 2000 you can just turn it off. The only time it's a problem is when Windows mis-identifies the type storage and turns it on accidentally - as I said, this isn't generally a problem with newer (last 2-3 years) drives.
The Mac "trash" facility to eject portable media is very convenient, although IMHO completely counter-intuitive. I personally do not understand how putting something in the trash = removing it from the computer, but whatever. I remember the first time I sat in front of a Mac in high school and stared blankly a the thing trying to figure out how to get my floppy disk out of it. Umm...
