I beleive the tire rack website has a size calculator as well as a fairly good explanation of the different numbers. Basically, the 195, 205, 215 numbers indicate increasing tire width. The 50, 55, 65 numbers indicate increasing sidewall height. So a 195-65 would have a skinny and tall section relative to a 215-50, which would look wider and flatter (they could have the same overall diameter, though, which is why it good to use the size calculator.) With dedicated snow tires a little bit narrow is good.
