My wife is a former headhunter and I hope that you understand what headhunters do: they find candidates to fill orders, they do not create jobs out of thin air. These orders come from clients with positions that they are trying to fill, typically after reviewing in-house and other sources that they do not have to pay a commission on (which is how headhunters make money). They typically look for candidates that have already been in the industry that the client is in, i.e. outdoor sports, as it's a much easier sell and they have some assurance that the placement is going to work out - they often don't get paid until the placement has been in the job for 90 days or some other period of time. A couple of unsuitable candidates sent to the client or failed placements and the headhunter will get dismissed too, so they have to be careful.
Finding a job is going to take a lot of your own personal work - it's a job. I would not place much hope in having a headhunter find you a marketing job, particularly if you wish to switch industries. Instead, you need to do a lot of research, networking, cold calling, etc. I imagine Phoenix must have some good job networking groups, this could be a start.
