If she's got a nice set of bino's already, how about a not quite as nice set? Yes, she already has a set for when she goes on a bird watch. But as any birder knows, birds show up all the time, and she probably doesn't travel with the good bino's all the time. So how about a nice compact unit, or even a nice compact monocular? Nothing too expensive. She can keep it in her purse if it isn't too big, or just in the car. So when she's driving down a side road and that lifetime Gyrfalcon lands on a branch up ahead, she can pull over and give it a good look. The best bino's do you no good if they're safely at home.
It doesn't make for the "Oh My!" factor, but it can be a thoughful gift nonetheless. You can pick up a decent set of small Bushnell's for about $100. Keep them small - yes, it gives up performance - but it increases the chance that you'll have it at hand. Peformance is important, but a decent set of bino's in hand is worth two of the best bino's sitting at home.
