A Saab is no different than a Honda, BMW, or Chrysler when it come to insurance pay-outs, resale value, etc. When any car is totaled it can be difficult to find a replacement car for the money that is paid out. Personally, I've not had a problem the two times my cars have been totaled - insurance pays 'retail' value so I've been able to find a suitable replacement, often for less than the retail price of the previous car.
Some odd, limited production editions might need special consideration but in those cases, you need to provide factual documentation as to why that car is worth more than the 'standard' edition. If there is not any valid or verifiable data to back up your claim (and there usually always is if it really is a limited-production edition) then you need to be prepared to be paid a standard edition value.
