I assume you are referring to 35mm.
Processing might be C-41 but printing still takes just as long due to use of real B&W paper. That has been my experience. Some labs might print on color paper instead but you may as well use digital because reasults will be crappy anyway.
Using digital for B&W work is fine, depending on what you are after. Real B&W film printed on real B&W paper using a real optical enlarger will give your pictures an unmatched look that is impossible to replicate using digital technology. Even just scanning B&W film is exceedingly difficult.
B&W film has the highest dynamic range that is unsurpassed by even those digital cameras that are specifically designed for superior dynamic range (such as Fuji S-Pro DSLRs). There are tricks one can utilize to expand the dynamic range but those exact same tricks can be used with B&W film as well.
My favorite B&W print film is Fuji Neopan-100. I get consistently outstanding results with it, especially in high contract situations. Its tonal range is superbly consistent.
The only C-41 process B&W film I have used is Kidak BW400CN. I was not impressed by it.
