Don't know of an online tutorial but here are a couple of other sources of info...
First, the Bentley manual (http://www.bentleypublishers.com/audi/4000/1980-1987/) is the offical USA service manual for that car. It's a little expensive ($130) but has a ton of good info.
Also you can buy a subscription and get pretty much the same info from alldatadiy.com for I think about $20 for a year.
That Audi 5-cylinder is a great engine and not too hard to do the head gasket on. He should be sure to locate and know how to line up the engine & camshaft timing marks. Also mark the position of the distributor. Other than that, it's mostly just a matter of carefully unbolting / disconnecting stuff and reversing the process to put it back together. Generally there are no weird fasteners / connections or clearance problems.
One thing that can be an issue is exhaust-manifold studs breaking. I think leaving the manifold attached to the head is an option (disconnect the downpipe instead), or just plan on replacing the studs.
As with most engines, while the head's off it's a great time to check and fix any issues with valves, valve seals, or lifters.
