I was forced to migrate to Office 2007 last year at work. Luckily I am always one of the last to migrate, regardless of the new software package, so I can learn from everyone's else's horror stories, and the version I get with each upgrade has been refined to eliminate the biggest "Gotchas!"
Now going back to Office 2003 on my home machine temporarily stops me in my tracks. I don't do plotting of graphs using 1000+ points, but I really appreciate the expansion of the filtering and conditional formatting functions in Excel'07!
Word 2007? Meh. I have learned to be as efficient with it as I was on the 2003 version, but the enhancements will not be recognizeable for most users.
PowerPoint is slightly more efficient in it's design, one you get used to that ribbon. And the ribbons can always be minimized - for each program. The biggest secret to using Office 2007 for new convertees is to select the big M/S meatball when you can't seem to find what you want. Many of the former easy to find & use commands, such as Print Preview, are displayed after clicking the meatball. That, and you can install a quick button for nearly every command in the tiny bar above the obnoxious ribbon.
