I like to use three different kinds of beans: kidney, black and pinto. The pinto and kidney beans need more cooking than the black beans, so I put them in about 10 minutes earlier. I use ground bison, about 1/2 to 1 inch balls, browned in olive oil, then add chopped onions (lots) and garlic (about 4 cloves for every pound of meat - I like garlic), a little salt, then chop up some canned tomatoes and add some tomato sauce and a little oregano for a savory flavor. Add the beans. Spice with cumin and ground chili powder, then if you want more heat, chop up a few red chili peppers. Taste during seasoning. Total bean cooking time is about 30 minutes for the kidney and pinto and 20 for the black. If you're a fan of black pepper, add that too.
