When I contacted LTS, I was prepared to accept the V-rated tires or a slight discount for them having installed tires other than the ones they had quoted. They insisted on replacing the tires, basically repeating what Michelin had told me about always using the spec tires on a car.
By the time the new tires arrived, I had put about 1,000 miles on the H ones; I've now put nearly as many on the V rated tires. These tires are identical in every way--same name, same UTQG, same tread design and depth--except for the speed rating.
The difference is noticeable. In city driving, the Vs are quieter on corners and turn more easily. On freeways, the Vs are definitely crisper; the Hs seemed just a little mushy and squirrelly; that's gone now. On blue-road curves, the Vs are comfortable at higher speeds and they seem to have little to no sidewall flex from the displaced force.
These are subjective responses, of course, based on not too many miles. But sticking with Vs definitely appears to have been the right choice.
By the way, my average MPG jumped about 10% when I put on the Hs; the Vs brought it back down a notch, but it's still running 7-8% better than before. Lots of variables go into MPGs, I know, but the tires appear to be helping in that regard as well.
