The C900 was built from 1979 through 1993, the 9000 from 1985 through 1998. There were engineering and cosmetic changes to be sure, but a lot of body, interior, and mechanical parts will interchange between model years and are readily available from the boneyards. At least that has been my experience.
I'm not that familiar with the newer models but from what I gather the previous-generation 9-5 was built for over a decade, and doesn't the current 9-3 date to around 2002? I would be surprised if there were not pretty decent used parts availability for those. I don't think I would bail out on an otherwise perfectly-good late model Saab due to parts fears.
Bear in mind there are still people who drive cars like Studebakers and Ramblers on a regular basis, and production of factory parts ceased decades ago for those.
