IIRC the manufacturers are required to stock a quantity of parts equal to the anticipated 10 year demand when a model ceases production. But new cars don't require service parts, and inventory costs money, so the real demand as vehicles age is almost certain to be more than the projected quantity.
And in the case of GM selling to Spyker, the vehicles were still in production so no service parts inventory may have been required. In the case of the OG 9-5, all tooling was sold to BAIC who was planning to continue producing the cars under their name so no service parts inventory may have been required.
Other than body panels most parts come from Tier 1 Suppliers who can continue making these parts and selling them under their own brand name after the particular vehicle goes out of production.
Basically there is no finite answer or guarantee of parts availability after vehicles go out of production - even for brands like Ford or Chevy.
