I’ll be traveling to Hong Kong & southern China to visit a vendor factory. I know in mainland China tipping is generally not the norm (although sometimes in hotels that cater and are frequented by western travelers). This is my first trip to Hong Kong & southern China (I've been to Beijing & Tianjin before).

Anyone know what are the custom and expectations in Hong Kong & southern China? If it is the custom, what are suggested amounts for taxi & car service, hotel staff and restaurants & should they be done in local currency or US dollars?

As I can (and have) expenses tips, I have no excuse for not tipping.

Don’t worry, this is not new outsourcing of jobs to China, as almost none of this product has been built in NA for a while. It is just moving production around Asia. Interestingly, I am working on another vendor factory move that will be bringing jobs to the US, from Canada (a state came up with HUGE tax incentives).
