I lived in Chile for two years and loved every minute. For food, try the empanadas, alfajores, pastel de choclo, and sopaipillas - cant go wrong with those. They put mayonaise on EVERYTHING, but it's much better mayo than here in the states. The Chilean specialty food is called a completo - it's the awesomest hot dog you will ever have. Get it with EVERYTHING. Try churrascos and barros luco at the little completo stands. Wicked good.
See a soccer game, but be careful if anyone asks what team you support - the wrong answer could get you in trouble. Check for indicators of which team the person asking supports and tell them that team. They will be your friend forever.
The public transportation system is awesome. Ride colectivos - they are cheap taxis with a fixed route like a bus only a car. Be very careful crossing the street - people run red lights all the time, and drive like an animal if you want to live.
If you are just around Santiago and can't travel a ton, check out a tiny town called Pomaire outside Melipilla - a town between Santiago and San Antonio. It's a pretty cool cultural experience and they have GIANT empanadas!
If you can get to a rodeo or a cueca event, do it! Wicked cool cultural experience also.
If you speak Spanish, don't expect to understand anything they say - Chilean spanish is pretty unique and generally very fast. They cut off all the ends of their words and have a few special chilean words like "po" that means nothing at all.
There are some cool spots around the city - like Santa Lucia - that are really cool to visit. Definitely get there. If it's ski season, ski there - you'll love it!
And yes, the women are beautiful.
