Yep, they work via USB. The gotcha is going to be overall throughput, and probably limits on the resolution you can run. You can buy USB 2.0 and USB 3.0 docking stations, and obviously 3.0 is going to have much higher throughput.
DVI is commonly about 4gbit of throughput, and USB 3.0 is limited to 4.8gbit so there is no problem running dual-link DVI-D through a USB 3.0 port. Where you'll have problems is running maximum resolution WHILE doing other things - big network or storage transfers. Something's gotta give... You also need to be aware of CPU overhead that comes with doing a bunch of stuff via USB - you are going to take a hit under heavy usage.
My recommendation would be to connect the laptop to your network wirelessly, and use HDMI out from the laptop to connect to a monitor. Then, use the docking station for things like storage, printers, and input, minimizing the amount of data going across USB. Yeah, you'll have two things to unplug (monitor and USB), but that's pretty minor.
