I was getting a car from Georgia, so I made up a Bill of Sale I knew would work at the New Hampshire DMV (the standard Georgia BoS would confuse them). I put in the seller's name and address, the car model, make, year, VIN, odometer mileage, the "car is sold as is without warranty" verbiage. He signed that, scanned it and emailed it back to me in New Hampshire. I printed it out, signed it and took it to the DMV. That was enough to get a temporary plate.
I flew to GA, bought the car and he signed the title over to me. So now I had the Bill of Sale, a signed over title and a temporary tag. I got in the car and drove 1,000 miles home. It wasn't a lot of money, so I paid in cash, but in your case that might not work so well. Get a certified check and have the guy ID'd down to his toenails. The 911 is a valuable car.
Ddi this once before, buying through a dealer. I paid for the car in advance but he held the check until I saw and accepted the car. He had a temp tag ready and I drove away. That was 104,000 miles ago on my '96 9K.
HOWEVER>>> I cannot believe you're selling a 1977 911 S and replacing it with a Saab vert. OTOH, the 911 is worth a lot more, so your bank account will be fatter!
