I think that's why you use two "winding bars." The rotational force will wedge it to the door or wall while you remove the other winding bar and put it in the next hole. I suppose it's risky but there are redundancies (the bar the spring is on) to keep you safe. Personally, unwinding it as depicted sounds much more appealing than trying to cut into a loaded spring.
