We need to understand what type of car it is, what type of transmission it has, and what "off" is. Turning the ignition off (just to Accessory) in my 1984 Suburban is Serious Effing Business. It's an automatic, so almost no power gets from the wheels, through the transmission, and back to the engine. The brakes are hydroboost, they are assisted by the power steering pump. No engine spinning means no steering and no brakes, and in a 5500lb truck with worm gear type steering and crappy '80s-sized brakes, you will be screwed quickly. That's a very different outcome from driving, say, my 1962 Falcon which with no power assisted anything largely behaves the same with the key on or the key off, save the ability to accelerate. On a downhill, you might not even know you'd stalled - and that I know from experience. As far as Saabs go, what Saab are we talking about? an old Sonett or a 9-7x? Is the steering electrically assisted? Does the ABS even have a booster (a c900 does not, for example)? Is the transmission a manual or an automatic?
There are way too many variables involved here for a blanket answer to "what would happen." Maybe nothing, maybe bad stuff. I wouldn't wanna be on the hook for generalizing it.
