AFAIK, assuming the cost doesn't scare you off and you have a tight-fitting flange you're working with there is no reason not use 518. If the oil pan does not have a good flat surface 518 doesn't have the filling capability that RTV generally does, as you note. I'm sure the reason Honda specs RTV is because it's very inexpensive and will do the job. You might also look into the RTV from Victor Reinz - I think it's called Reinzosil. It's good stuff and seems forgiving of working time. It's what I use just about everywhere these days.
As for installation, I've found that using a couple studs to quickly align the pan is very helpful. Felpro makes little plastic doodads that actually clip the pan in place while you thread some screws.
