We recently supplied a special water-based paint for a large project that was completely ruined by freezing while in transit last December. Opening the buckets, the paint was obviously very thin and had very poor coverage when applied. I spoke with a coatings chemist about this and he said that the latex can break down causing this type of behavior.
If it stirs up fine, you might get lucky. Test paint a small area to check for coverage.
