One has been a favorite of mine since childhood - Pumpkin Pie. Not the bland squishy Pumpkin Pie that tastes like hot Squash ladled into a pie crust, but a pie that is cooked to a firm consistency. One with the top of the pumpkin mixture morphed into a leathery crust during baking, a few fine cracks in the leathery crust, and droplets of moisture/oil bleeding up through the leathery top adding a glistening gleam to the pie. Two or three random dark spots on the top add to the visual allure. My wife just baked up a beautiful one that is now cooling for tomorrow.
The second favorite was introduced to us by our daughter-in-law a few years back and was always a favorite of hers. Sweet Potatoes that are boiled, mashed, seasoned, and placed in cups made from half the rind of an orange for final baking with a couple half pecans on the top of each. The flavor of the orange permeates into the sweet potatoes making them incredibly delicious. Alas, not this year as we are not hosting.
