I've done all that. Handbrake is great! Look into DaVinci software for editing. Both FREE. Cumbersome but good and just software...

Hardware and Software I use the HDML Cloner Box Pro and/or Evolve. Both are made by Cloner Alliance company. Set you back 100 buckaroooooos each. All digital and have analog RCA and digital HDMI inputs. Use it also to record HD content from your DVR or straight from broadcast with a simple HDMI Splitter.
(I don't work for them)

They are just small boxes with inputs and outputs. All cables included.

I have both and recommend both. They work just a little bit differently for different inputs. Family videos, go with Cloner Box Pro. Video games and shows go with Evolve.

Output to a USB Stick or Drive. Up to 2 TB. Easy 1080 60p MP4 Video or lower resolution output. Up to 4K input.

Had them for 5 months now without a hiccup. On eeeeeBay but cheaper straight from them (China).
