When to change diesel engine oil

Yes, I still have my '95 900S but this question is in regard to my GMC Duramax truck. I only drive it about 1000 miles per year to haul a travel trailer to local campgrounds. I use Mobile Delvac diesel motor oil and change it every other year. It's my understanding that even sitting idle most of the time moisture from the air gets absorbed into the oil, but I live in SE Washington state which is a semi-desert. Last year's rainfall was 4.07" and so far this year it is only 3.12". Any thoughts on whether changing the oil biannually for these conditions will be much appreciated.
