Touchscreens are phenomenal when you are space-constricted - airplanes, trains, or when you're riding shotgun in a Bay Area-bound S65 at 100mph. Being able to get around the internet (or monitoring tools, for that matter) without trying to use a touchpad buried in your crotch is nice. Similarly, tablets are very useful when you're in research mode or just reading and typing is at a minimum - not all "computing" needs a keyboard and mouse. Tablets can be useful for reducing eye-strain when you're in non-conventional environments - being able to shift the display around in relation to your eyes is great. Generally, being able to be productive without a desk is great. Additionally, people use "computers" in a variety of ways, and while some people like having a desktop, a laptop, a Kindle, a phone, and a myriad other devices, for some there is value having fewer hybrid devices. Perhaps they don't do every task at 100%, but I personally give serious thought to the benefits of less management over perfect suitability to task.
If all you do is work at a desk on keyboard-intensive tasks, then sure, who cares about any of that, but IMHO that's not most people - certainly not most home users. Most home users spend more time consuming, less time typing, and prefer to not be bound to one place or one type of environment. Even still, again IMHO, professionally speaking computers that are only functional when sitting at a desk leave a lot of time management opportunities on the table (no pun intended).
