Body shop recommendations

Hi!
This is my first post to this site. Let me introduce myself: My name is Donald. I'm 27, live in Los Angeles, and am a true SAAB fan. I currently own three:
1991 900 turbo hatchback, 5 spd, black, 48k miles
1992 900 turbo hatchback, auto, citrin beige, 80k miles (daily driver)
1993 900 turbo convertible, 5 spd, ruby red, 62k miles
I've also owned a 1988 SPG. Sold it at 217k miles.
I bought all of these cars used, since I was too young to buy them new.
I would like to repaint my convertible and restore it to "as new" condition. I have been checking out body shops here in Los Angeles and all of them primarily do collision repair and not restoration. They say, "Yeah, I can paint your car and have it back to you in a week or two". I tell them that I am in no rush and want someone who is patient and meticulous. Since I barely drive the car, they can have it for as long as they need.
Can anyone recommend a body shop that takes their time, are perfectionists, and doesn't do collision repair? I want someone who can match the original "orange peel" and paint thickness. (Yeah, I'm crazy!) I realize that such a paint job is very expensive. I want to find the right people and pay for it once and be forever satisfied.
