Beleieve you will find that catapults were installed on airgraft carriers long before they flew jets of carriers. Jets suck at initial acceleration because of thetime it takes to sppol up the turbine. If you can hold a jet at maximum thrust before releasing the brakes, then you will get great acceleration. Problem is, you can't usually hold the craft still. So, and this matters particulalrly in a drag race shoot out, the jet has to keep itself stationary and must run the engine way below max thrust. When the green light comes on, the Viper or similar takes off but the jet has a small delay as the trust builds.
