Seems high from a once cabinetmaker.

Questions are: What is the material of the cabinet boxes (interior)?
How many door and drawers are there? What kind of overlay are the doors? (ie. full overlay, semi-inset or full inset). And what kind of hinges, hardware and drawer glides are they using? And why not stip the available doors and drawers?

Look into new doors, faces and drawers. There are companies that make these items for the cabinet industry. Some cabinetmakers these days are simply make a box and order the doors kind of shops. For the cost of laminating all those surfaces you could have a solid wood door of your liking. Warning though, Maple is hot right now and very costly. It would be nice to know what the original frame wood of the cabinets are.

I've been out of the cabinet business for a few years now so my info may be off. Nonetheless look around and explore other approaches. Try Oldhouseweb.com for a good bulletin board and FAQs. And good luck with your new old home, I feel your pain as my wife and I just moved into a 1891 Queen Anne Cottage in need of work.
